Beef Heart is surprisingly versatile. The heart is high in nutrients like other organ meats, but is still a muscle and cooks similarly to steak.  You can grind it and use it in any dish that calls for ground beef. Ground heart is the key ingredient in a traditional coney sauce. It is also delicious sliced thin and cooked like steak.
