Flank steak is a long, thin cut of beef with a very distinct grain that runs lengthwise. Slice it perpendicular to the grain to shorten the muscle fibers and make it more tender.  Flank Steak is known for its bold and beefy flavor and is a great choice for stir-fries and fajitas.
